Recipes of salad dressings


This is the basic recipe and makes 300ml (10 fl oz / 1/4 cups) of mayonnaise which is sufficient for 4 to 6 people.

2 egg yolks, size 2
1- 2 tablespoons white wine vinegar
1 teaspoon grain mustard
300mI (10 fl oz / 1/4 cups) olive oil-light (strong olive oil, i.e. extra virgin, can make mayonnaise taste bitter)
Juice of 1/2 lemon
Salt and pepper

Beat egg yolks, white wine vinegar and mustard in a bowl until almost white. Add oil drop by drop, beating continuously until about half the oil has been used. Add the rest of the oil in a very slow stream, still beating constantly. When all the the oil has been incorporated into the mixture, season with lemon juice, salt and pepper.
